Background:

Technology Details:
The utilization of processed products using sorghum and finger millets is now important because they contain resistant starch (which is digested slowly), also proteins, minerals, vitamins, and phytochemicals. Green gram (Vigna radiata) and soybeans are excellent sources of protein, dietary fibre, vitamins, and minerals. Sprouting increases protein and dietary fiber; reduces tannin and phytic acid and increases mineral bioavailability and is therefore incorporated in mixes to enhance the nutrient content of diets. Jaggery, a traditional sweetener made by concentrating sugarcane juice, is natural. Buttermilk is an excellent source of minerals, vitamins, enzymes, and protein with several therapeutic potentials and has applications in a variety of foods such as drinks, nutritious bakery products, confectionaries, etc.
